Sweet Potato Salad with Raw Aioli Dressing

Serves one as a meal, so increase the quantities depending on the number of people. Or double up and serve as a side salad with many.

INGREDIENTS:

2 cups baby spinach leaves

1/2 cup grated carrot, diced Lebanese cucumber and celery

2 Tbsp Pine Nuts

1/2 cup roasted sweet potato chunks (you can also use grated raw sweet potato)

1/2 Avocado per person – dice and add to the salad or dress the side of your plate with quarters

Toss all the ingredients together in a salad bowl. Squeeze over some lemon juice and sprinkle with pink salt flakes. I like to use pink salt flakes to dress my salads as they are crunchy and look really great. Drizzle the Aioli Dressing over the salad and serve.

AIOLI DRESSING:

Blend the following ingredients until you have a smooth, creamy sauce. Store remaining sauce in the fridge.

3/4 cup coconut water

2 cloves garlic

1/3 cup lemon juice

1 teaspoon sea salt

1 cup Cashews

1/2 teaspoon nutmeg

Enjoy this dressing on any salad or use as a dip with raw veggies, sweet potato wedges or any roasted veggies. Also great as a sauce on Zucchini Pasta noodles.
