Seafood Christmas

For those of you who live in a hot climate at Christmas time, as I do, the seafood BBQ Christmas lunch has become very popular. Here is something new for you to try this year. Simple and easy and totally yum.

Lobster Tails with Lime and Chilli Butter

8 Lobster Tails, 125gm chopped butter, 1/3 cup (80ml) lime juice, 2 small fresh red chillies finely chopped, 2 cloves garlic finely chopped, 2 tablespoons chopped fresh coriander, large red chillies for serving – optional.

Remove the thin shell on the under side of the lobster tail to expose the flesh. Preheat the BBQ until hot. Place the butter, juice, chilli, garlic and coriander in a small saucepan on the BBQ. Stir until melted. Reserve half the butter mixture for serving.

Brush the flesh of the lobster with the butter mixture. Cook lobster, shell side down for 10 minutes. Continue to brush with butter mix pouring remaining mixture into the flesh. Meanwhile BBQ large chillies for serving, until brown and tender.

Turn lobsters over and cook flesh side down for a further 1 -2 minutes until just cooked through. Serve with reserved butter mixture and cooked chillies.

This lime and chilli butter mixture can be used for all types of seafood such as prawns, bugs and fish fillets like salmon, snapper and barramundi.
