Mushroom, Leek and Zucchini

Do you have favorite ingredients that just keeps showing up in almost everything you cook?

For me its a staple of mushroom’s, leek’s and zucchini’s. These three little beauties seem to form the base of our evening meals. Whether we are having stir fry, or couscous or lamb, fish or chicken. Their flavors can be as subtle or as intense as you want to make them.

Add them to cream, mustard, stock and chicken thighs and you have a magnificent casserole or pie filling. Chunky or diced nice and small, in an omelette or frittata for breakfast or simply served on there own fried in butter and olive oil and a sprinkle of pink salt or vegeta.

Simple, easy, quick, convenient and full of flavor. Delicious.
