A Tip from one of the best.

Something I heard just the other day, that is really the way I love to cook and have done for a long time now…..

” Whenever you are trying a new recipe for the very first time, follow it exactly”. Ian Hewitson.

This is not to say, however, that if the recipe has an ingredient in it that you don’t like, that you can’t back it off a little. But be mindful of changing things too dramatically though. Once you have made the dish once or twice, then decide what, if anything, you might change to make it your own.
